Once you are in ssh, go to etc/init.d and find the two server names..then you can turn off the execute bit and they will be unable to start up again.

I haven't yet tried your solution but I have a question. Will doing this also prevent remote access to the drive or just stop thumbnail generation? I'd like to still use the app to see my files when not at home but after upgrading to OS5 a month ago, my drive is still indexing. It reached 99% but is now hovering around 14-23% up and down.
